The name Las Brisas refers to the gentle breeze, which many coffee growers in the region benefit from during the warm harvest. Caravela works closely with the farmers who have made great strides to consistently produce high quality coffee and are always looking out for ways to improve what they do. They work hard using techniques such as slow breeze drying, manual defect removal, specialized tree care, long fermentation processes and careful picking of only mature cherries.
Over time these farmers have worked on improving their milling processes, as well as investing back into farm infrastructures.
“The department of Tolima is famous for its steep mountains, abundant water and deep valleys which create the perfect recipe for good agriculture. Between these high mountains, wind tends to blow all year round up from the Rioblanco River and through the coffee fields, filling the air with sweet coffee flower fragrances.
